Tommy’s Margarita recipe a classic margarita variation

The Tommy’s Margarita was the cocktail that made me appreciate tequila. I had never really tried a proper 100% blue agave tequila before, but after this, it completely changed my perspective. Since then, it has been one of my go to cocktails.

The story of Tommy's Margarita

Tommy’s Margarita is a modern classic that changed how people think about the Margarita.

It was created in the late 1980s by Julio Bermejo at Tommy’s Mexican Restaurant in San Francisco. Unlike the Classic Margarita, which uses triple sec or another orange liqueur, Tommy’s Margarita is build like a sour with tequila, lime juice and agave syrup.

This small change had a big impact.

By removing the orange liqueur, the cocktail becomes more focused on the tequila itself. The agave syrup enhances the natural character of the spirit instead of masking it with additional citrus sweetness. The result is a cleaner, more direct expression of a Margarita.

The drink quickly gained recognition among bartenders and was later popularized by influential figures in the cocktail world. It is now considered a modern classic and is featured in cocktail books like Cocktail Codex and Death & Co.

Tommy’s Margarita also played a role in highlighting the importance of quality tequila. Because the recipe is so minimal, using a 100% agave tequila is essential. The cocktail does not hide flaws, it exposes them.

Today, Tommy’s Margarita is often preferred over the classic version by bartenders and enthusiasts. It is simpler, more balanced, and puts the focus back where it belongs, on the tequila.

Choosing the ingredients

Tommy’s Margarita is built on very few ingredients, which means each one has to carry its weight. There is nothing in the recipe that hides mistakes. Quality and balance are everything.

Tequila:

The most important part of a Tommy’s Margarita is the tequila. We recommend using a 100% blue agave tequila such as Patrón or Cazadores.

Because this recipe removes orange liqueur, the tequila is fully exposed. A well made tequila brings depth, structure and a clean agave character that defines the drink. Lower quality tequilas can taste harsh or unbalanced, which becomes very noticeable in this cocktail.

A blanco tequila is typically the best choice. It keeps the drink fresh and allows the citrus and agave notes to stay clear and precise.

Lime juice:

Fresh lime juice is essential. It provides the acidity that balances the sweetness of the agave syrup and the strength of the tequila.

Bottled lime juice will not give the same result. It often lacks brightness and can introduce a dull or artificial taste. In a cocktail this simple, fresh juice makes a clear difference.

Agave sirup:

Agave syrup is what makes Tommy’s Margarita special, because tequila is made from agave as well.

This creates a more cohesive flavour profile, where the sweetness supports the spirit instead of competing with it. The level of sweetness can be adjusted slightly depending on preference, but it should never overpower the drink.

Garnish

For garnish, a half salt rim and a lime wedge is the classic choice.

Common Mistakes

Do not use a tequila mixto. Using anything other than a 100% blue agave tequila is the easiest way to ruin a Tommy’s Margarita. The cocktail is built around the tequila, and lower quality spirits will make it taste harsh and unbalanced.

What to Remember

  • Keep it simple - Use fresh ingredients and quality spirits. Nothing more is needed.
  • Shake with intention - A proper shake chills and dilutes the cocktail, creating a smoother and more integrated drink

  • Do not overdo the salt  - A light or half salt rim is enough. Too much salt will dominate the flavour instead of enhancing it
