Ingredients
  

The Cocktail
  • 4 cl Amaretto
  • 2 cl Bourbon
  • 3 cl Lemon juice
  • 1 cl Simple Syrup
  • 1 dash Angostura Bitters
  • 1,5 cl Egg Whites
  • Ice cubes
Garnish
  • 1 Maraschino cherry
  • 1 Lemon twist

Equipment

  • 1 Rock/Tumbler/Lowball Glass
  • 1 Shaker
  • 1 Strainer
  • 1 Jigger
  • 1 Peeler for garnish

Method
 

Preparation
  1. Separate the egg white from the yolk.
  2. Prepare the garnish by cutting a lemon twist and rinsing a maraschino cherry.
Instructions
  1. Add amaretto, bourbon, lemon juice, simple syrup, egg white and Angostura bitters to a shaker.
  2. Dry shake for about 10 seconds.
  3. Dry shaking is key when making cocktails with egg white. It creates a smooth and stable foam.
  4. Add ice to the shaker.
  5. Shake hard for 8 to 12 seconds.
  6. Fill a lowball glass with ice.
  7. Strain the cocktail into the glass.
  8. Garnish with a maraschino cherry and a lemon twist.
